Happy Homemaker Monday

I took today off work and I am very happy about it! I am writing this post from my bed, listening to the birds singing outside of my window. I'm still getting into the groove of 2025, even though we are nearly to spring!  I guess when you start the year with a huge job change and COVID - it's bound to take some time. 

In other good news, I am down a total of 64 pounds from my highest weight! I've just mainly cut out most meat.  Low fat, salt, sugar. Lots of veggies, fruits, whole grains, lots of beans.  I've been focusing more on making my body healthy, putting foods inside that will give me all of the things i need to live longer (God willing!).

 About half-way through A Voice on the Wind by Francine Rivers. It is really, really good. She is such an amazing writer. 
 

*** What's on my tv today *** 
  • I finally watched Jesus Revolution. I didn't love all of it - but I loved a lot of it. I cried several times and it made my heart yearn for a revival!!

Oatmeal with blueberries, peanut butter, and flax/chia seeds

 Plant-based meatballs, spanish rice, pico, corn and black beans, avocado  
 
 
*** On the dinner plate *** 

 Homemade pizza with plant-based cheese, Trader Joe's lavash, peppers and onions, green olives

Sunday: Corned beef, cabbage, red potatoes, carrots, rutabaga, green beans, pumpernickel bread (I only ate the veggies and bread - I'm working toward a whole food plant based diet. Right now I still eat meat on occasion and still rely on meatless stuff! It's a work in progress)

Tuesday "hot dogs" and sweet potato fries
 
Wednesday Chili - three bean

Thursday Cabbage and rice - maybe crispy tofu 

FridayCreamy Cajun Pasta 

Saturday Enchilada bake (have corn tortillas that need using up, I'll do black beans, corn, onions, peppers, salsa, dairy free cheese and whatever else needs using up!) 

SundayLeftovers (chili over baked potato maybe?)

Today:
I took today off as I knew I'd need it after running around and cooking a huge meal yesterday! I'm so glad that I did.

  • Working on my new WVW website 
  • Getting some story prep done for Rough Draft Challenge
  • Dishes
  • Sweeping
  • Reading
  • Hanging up my art prints of the Fruit of the Spirit in my office 
  • Wipe down fridge, stove, counters in kitchen
  • Put my new lemon tablecloth on my dining room table! (thinking spring!)

I love being up in time to see the sunrise. If you look in the background, you will see the Ambassador Bridge to Canada

My sweet baby gave himself a black eye ramming into my bedroom door with his head! He's doing much better now and my bedroom door will stay open!

I am still on this health journey myself and pretty much do what you do, except I do eat meat, but mainly fish and chicken and lots of chickpeas and beans, fruits and veggies and all the good stuff.   2. I really enjoyed this blog – well done on your weight loss! 👏 Eating healthy truly makes a difference. I only eat meat once or twice a week, and it's always chicken.

    That is so awesome!! Great job and it must feel amazing to be fueling yourself in such healthy ways. Matt & I have just started working at things and changing things & I've only lost about 8 lbs so far, but hoping to lose like 30 more! :)
    I miss Days of Our Lives. I watched it since I was in high school, but then I needed to have peacock to watch and I have too many other streaming things to get that one too.
