Menu Plan Monday for April 27th




I haven't been all that great at menu planning lately, but I am trying to get back in the swing of things.  

BREAKFASTS:  This week I am going to make breakfast sandwiches.  An egg, turkey sausage and light cheese on an English muffin with a piece of fruit.  


LUNCHES:  For work lunches I try to go through my fridge at the end of the week and come up with something I can put together that will keep me from wasting food.  This week I have a bag of spinach, green onions, sausage, some mixed vegetables, 3/4 jar of pasta sauce and lots of bits of different-shaped noodles.  I am going to make a veggie pasta bake!  With it I will have a yogurt and piece of fruit.  


DINNERS:  

MONDAY:  Chicken and vegetable stir fry 

TUESDAY:   Pork Carnitas in tortillas with a green salad 

WEDNESDAY:  Spend the evening with my kids @ my parents' house 

THURSDAY:  This is a Slow Cooker day due to work, so I'm making Slow Cooker Chicken and Gravy over noodles with steamed broccoli.

FRIDAY:  Chicken burrito bowl with cilantro lime rice (will use leftover pork from Tuesday)

SATURDAY:  Family day @ my parents' house 

SUNDAY:  I usually make a big dinner on Sunday, and this week is no different.  I am making NY strip steak, Caesar salad, oven potatoes and garlic bread.
